Any suggestions on how to get the ammonia under control other than using Ammonia-Loc?

I definetly would not use ammo-lock. Your tank just needs to cycle. Just get in the habit of changing the water every day or every other day and add a full dose of beneficial bacteria each time, it should take more than a few weeks. Some filters like my two Fluvals have ammonia removing media but I don't bother, just let it cycle.

I have heard that ammolock can throw your test results out so you don't really know whats happening... be wary of using it. Cheers

What I've personally done to get ammonia under control is two things;
1) limit the amount you feed, or have periods of fasting, for example I didn't feed my fish for around 5 or 6 days.
2) regular water changes, I have been doing 3 water changes a week, so I do a 30% change on Tuesday, Thursday then a 50% change on a Sunday.
Then it's pretty much a game of patience while you wait for the tank to cycle properly during this time.
Also how big is your tank and how many occupants do you have?

Ah okay, one fancy in 12 gallons is fine, as long as you know not to add any more fish as the tank is pretty much at it's stocking limit.
It sounds like your tank may just need to cycle, so if you follow the advice of feeding less and lots of water changes, it should be fine.
